Cod and Potatoes Stew

3 - 4 T. olive oil

1 medium onion - chopped

1 T. chopped parsley

2 tsp salt ( or to taste)

1/2 tsp. black pepper

4 large potatoes - cut in 1 inch chunks

4 to 6 frozen cod loins - thawed

 

Saute onion in olive oil until transluscent. Add potatoes and cook for about 15 minutes. Add parsley, salt and pepper, and 1 cup water. Place cod into potatoes and cover. Cook about 15 minutes or until fish is flaky and white. If you like it with tomato sauce, add 1 cup tomato sauce or stewed tomatoes after onion. Cook a few minutes , then add potatoes, etc...
