3 eggs

1/2 tsp. cinnamon

3 lbs honey

2 lbs whole almonds

1 orange, peel and juice

1 tsp salt

pinch pepper

8 cups flour

5 tsp. baking powder

skin of one tangerine chopped fine

 

In large saucepan, combine honey, almonds, orange peel and juice, tangerine skin. Bring to boil, simmer 5 minutes. Let cool. In large bowl, mix together all dry ingredients. Add honey mixture and eggs. Mix well. Form logs (approx. 5) and place on greased cookie sheet.

Bake at 350 degrees for 20 minutes. Remove from cookie sheet, let cool for 10 minutes. Slice on the diagonal. Either let cool as is or for harder papatelli you may cook them again for 5 minutes.
