Tomato Garden Salad

5 or 6 plum tomatoes - seeded and cut

1 cucumber - peeled and sliced

1/2 c. sliced celery

1/2 c. sliced carrots

1/2 c. black olives

1/4 c. thinly sliced red onion

3 fresh basil leaves - thinly sliced

4 T. olive oil

2 tsp. golden balsamic vinegar

1 tsp. salt

pinch of black pepper

pinch of oregano

 

Combine oil, vinegar, salt, pepper and oregano. Mix well and set aside. In a medium bowl, place tomatoes, cucumber, celery, carrots, olives and onion. Pour dressing over and mix well. Arrange on platter lined with green lettuce leaves and sprinkle with basil. Beautiful to look at and delicious to eat!!

Note: You may add or omit in dressing according to taste. Same with vegetables. You may add peppers, mushrooms, anise, etc. to your liking.
